Our go-to recipes


Whenever I'm not sure what to make or if I know I have guests coming over for dinner, this is my go-to recipe. 


Pesto Chicken Pasta



Love making this recipe at the end of the week when we're low on groceries. 


Ingredients
1 pack of chicken breast fillets (I prefer the Maple Leaf kind)
Any type of noodles (enough for the amount of people you're feeding)
1 cup of pesto 
1 cup of cheese (mozzarella)


Directions
In a pan, cook your chicken and add spices (I prefer Italian spices) to your liking. At the same time, bring water to boil and cook pasta for around 7-8 minutes. Once the chicken is cooked, cut it into little cubes and pour into the cooked and drained pasta. Then add the cup of pesto, the cup of cheese and mix together. (You can always add the pesto and the cheese to your liking)


This recipe is super easy and delicious!





Mama's spinach dip




This delicious dip is an all time party fave! 
This party favourite is requested every time I get invited to a gathering, and since it's so simple to make, 
I never mind. 

Ingredients
1 container of 5% sour cream (500 ml)
1 container of mayonnaise (455 ml)
1 frozen package of chopped spinach
1 packet of Knorr vegetable soup
1 loaf of pumpernickel bread (two if you plan on using one as a bowl or have a big crowd)



Directions

In a large container, add 13 heaping tablespoons of sour cream, and equal parts mayonnaise. I generally just use the entirety of the two containers if you have those two exact sizes available.

Add the thawed spinach and mix until evenly combined. You can leave this mixture to sit in the fridge overnight.

Leave the soup mix until the last minute. If desired, you can pass the soup mix through a sift to avoid any big chunks, I prefer crushing them with my (clean) hands and adding them to the mix.

Cut the bread into bite size cubes, I aim for the size of a nail polish bottle (weird?) and serve alongside the dip. 


If you decide to get all fancy and use a second loaf of bread as a bowl, simply cut out the top as if it were a pumpkin, and work it with a jagged edged knife until you're satisfied with the "bowl" shape and size. What's fun about this bit is that if people get really hungry, they can start eating the bowl!


Final tips
Make sure to keep the dip cool, as well as your expression as people oggle over how amaaazing this is (yeah that's right, oggle)

If you're expecting a large turnout, buy a second loaf and cube it up as well. I like to keep a second loaf as a refill so the dip can have a second run throughout the night. Trust me, they will ask.

Since this recipe is definitely not easy on the calories, you can lighten it up by using light mayo and sour cream.
